Chocolate cupcakes (or cake)

Well this was an easy treat for my aunt's birthday!! everyone loved these!

cake
1 cup flour
1/4 cup cocoa powder
1/2 teaspoon of baking soda
1/2 cup melted butter
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup hot water

ganache
1 cup of dark chocolate (in thin pieces)
1 cup of heavy cream

In a small bowl mix flour + cocoa powder + baking soda

 In a large bowl mix melted butter with brown sugar, then mix in the 2 eggs and vanilla extract.
When it is combined (looking like this) mix in the flour mix (little at a time). After combined mix in the hot water. Pour the batter into the prepared pan.



bake for 30 / 40 mins (if you are not sure take a toothpick and "poke the cake" if it comes out clean it is done!

For the ganache just bring the heavy cream to boil and pour over the chopped chocolate. give it a quick stir and pour a spoon into each cupcake ~(or everything it it's a cake!!)

Valentine's Cookies

My brother  asked me to do something for our cousin and I think I’ll be giving these to my friends!!

For the cookies:
2 ½ cups flour
1 cup sugar
1 teaspoon vanilla essence
2 eggs
1 cup butter
1 teaspoon baking powder
frosting:
1 cup of confectionar’s sugar
1 lemon (juice)
colouring (optional)

You can substitute lemon with milk but I think lemon is so much better! The cookie is not too sweet and like this it's sweet 'n sour at the same time!

Mix the flour and baking powder, set aside.
In a large bowl, mix butter, vanilla and sugar togather until smooth, then add the eggs one at a time.
Add the flour mixture a little at a time.

Divide it in three pieces and wrap them in pelicule. Let them rest in the fridge for 2 hours or overnight (I put them in the freezer for 30 mins)
Roll and cut to whatever you feel like. Oven them for 8 /10 mins (until golden)
For the frosting just combine the ingredients. If i tis to liquid add sugar, if it’s too pasty add lemon juice or milk. (Frosting the cookies can be very messy and time consuming but I think they were worth it :D )

Ginger Chicken With Veggies

Ok!! let's make some Chineeeese FoooooD!!!
We need:
Chicken (cut into pieces)
courgette (sliced)
Onions (chopped)
Brocoli (into pieces)
Mushrooms (sliced)
soy sauce
ginger
and any other vegetable you like..





Put the chicken in a bowl and add crushed ginger and soya sauce let it rest for an hour or two.

Heat a pan with to tablespoons of olive oil/oil mix mix (there is no secret to this) add a bit of water and soy sauce as desired... It's ok If they are kind of raw, chinese eat it kind of raws anyways...
Heat other sauce pan over medium heat with plenty of oil and dip the chicken in...  when they are golden in one side turn them over until the other side is golden...
 and it's done...


 uuuuh it's finished!

Cupmuffin

So whatzzz up??
So I made these and they were a big hit and they were really easy!!
You can use your favourite cake recipe or just buy instant-cake mix!

Anyway...
When the mixture is ready just divide it into two bowls and add colouring to one of the bowls.

Then you add by layers... two tablespoons white , two red and then finish it with 2 tblspoon of white again..





My friends said they didn't want a sugary topping so I just melted white chocolate with2 tablespoons of butter (in a bowl over boiling water in a pan)  and turn off the heat and add cream until desired consistency... but BEWARE it will get firmer.
Just pour topping over the cupcakes and voilá!

This is an easy treat or an easy way to please your guests!

how to pass in a test if you forgot you had it

Well according to a big master in my university. After answering the ones you know you just click answers in this order a)a) b)b) c)c) and then d)d) he says you have a 50% chance of passing. That's how he is going through economics bachelor (and he is in 2nd year)!
today I actually tried it cause I didn't remember I was having a test.

Ok I didn't risk it all, I already had a 18 and a 17 (from 0 to 20) and the worst grade is droped, so it seemed like the perfect opportunity to try this theory.

(21 dec 2010) yes I received a 13.3 not bad.. And the wrong ones were the ones I thought about..to the other questions I applied this theory! good luck!

A place to think


Have you ever just realized you need to think ?? Obviously I mean it in an I need to reflect kind of way.... Well I have the perfect solution for you. Go to a concert! Not a "I-love-this-band" but an OK band. 
Why ??
Last week my uncle took me to a Jazz concert and man did I think a lot... from grades to recipes for cupcakes. The next week my uncle confessed that in the concert he thought that the members of the band were all envolved with each other.

So Yeah I think it is the perfect solution to "I need an answer" moment.

What should I eat?

Well this blog is dedicated to my dear fellow students, that like to cook but don't really bother to cook for themselves.
I think the best thing to have around is cereals and ramen noodles. They are just so easy to make and delicious

You just place the noodles in thw bowl with the seasoning and just pour boiling water on it!! How great is that???

I know this is old, but this is not like pasta ready-made full of calories... this is egg-noodles so at least I like to think it is (ok, kind of) healthy.
